What is your favorite holiday cookie?
My favorite would have to be the Peppermint Swirl cookies I made last year. They turned out amazing! I used to hate making or eating any type of sugar cookies, but lately I've grown to love them. Maybe I just didn't know what I was doing.
If you feel like sharing a recipe too, I will not object!
Peppermint Swirl Cookies
Ingredients:
1 C butter, softened
1 C sugar
1 egg
2 T milk
3 C flour
1/2 t baking soda
1/4 t salt
1/2 t peppermint extract
4-5 drops red food coloring
Directions:
In large bowl, combine butter, sugar, egg, milk, and vanilla; mix until light and fluffy. In medium bowl, combine flour, baking soda, and salt. Add flour mixture to butter mixture; mix well. Place half of dough in plastic bag or wrap. To remaining dough, add peppermint extract and red food coloring. Mix well. Place in plastic bag or wrap. Refrigerate both portions for one hour.
Divide each portion in half. Roll one part white dough into a 10x8" rectangle between 2 pieces of plastic wrap. Set aside. Repeat with pink dough.
Remove top sheet of plastic wrap from white and pink doughs. Place pink dough over white dough. Remove second sheet of plastic wrap from pink dough. Trim edges, if desired. Starting at long edge, roll up in a jelly roll fashion, removing plastic wrap from bottom as dough is rolled. Repeat with remaining dough to form two rolls.
Wrap in plastic wrap; refrigerate 8 hours or up to one week.
Heat oven to 375F. Slice cookies 1/8" thick. Place 1" apart on un-greased cookie sheets. Bake for 5-7 minutes. Cool 1 minute; remove from sheets. Cool completely.
